Red Lentil Spread

Another one from the adult version of the Low GI cookbook.
With the lentils, the capsicum and the paprika I thought it was going to be a very full-on taste sensation but it is actually rather mild. And very nice, on some rice crackers.
I kind of stuffed it up, not draining the lentils before putting them in the blender but fortunately I put it through the drainer and it worked out all good. Yum!
